Vanni Formentera

Vanni Formentera is a restaurant with its own personality located in the heart of Sant Francesc, the capital of Formentera. Located in an old house full of character, this space is the work of Nico, the chef in charge of the kitchen, who combines the best of three culinary traditions: Neapolitan, Spanish and Formentera cuisine, resulting in an authentic, tasty gastronomic proposal full of Mediterranean nuances.

Paella and fideuá are two of its most celebrated dishes, made with fresh fish of the day and become a real attraction for tourists and locals who do not want to leave Formentera without trying them. Along with them, the menu judiciously covers all the moments of the meal. Among the starters, the Cantabrian anchovies, the burrata caprese with basil oil, the provolone cheese melted with dried tomato, the homemade bacon croquettes or the various bruschettas stand out. As main dishes, the kitchen offers everything from fresh pasta, sweet potato ravioli, cannelloni, spaghetti with clams, to meats such as beef tenderloin with truffle puree, ribeye by weight, loin goulash cooked at a low temperature or fresh grilled sea bass. Desserts include tiramisù, cheesecake with red berries and chocolate tenerine with coffee foam.

The wine list is extensive and careful: whites, reds, rosés and sparkling wines from Spain, Italy and France, including the Savina Blanco from Bodega Terramoll, a wine made in Formentera itself.
