DESCRIPTION
Since 1939, Quesostorralba Encarna the Menorcan tradition in each bite. Created by "Bep de Torralba" and transmitted to Nicolau Cardona, this Mahón D.O.P. Combine artisan methods with raw cow milk from selected meadows. Its production includes a careful process: the curd is wrapped in fabric (“fogasser”), press and dry, maturing in natural caves, where oil and paprika are manually applied to stimulate an elastic cortex and protect its organoleptic profile.
Available in two select maturations:

Semi -Care (2‑5 months): Ivory interior, clear orange cortex, elastic texture and buttery flavor with dairy aroma.

Healed (+5 months): yellowish color with dark brown cortex, firm texture and evolved, intense and slightly spicy flavor, ideal for the most demanding palates.
Each piece, unique in shape and weight, reflects the conditions of the island, wind, saltpeter, light and humidity, which mature their personality. Internationally recognized, Quesostorralba has been awarded medals and diplomas in the World Cheese Awards (Bronze2013; Semicured and Cured Awards 2022–23).
